COTE Vegas is officially arriving on the Strip. Opening October 4, 2025, at The Venetian Resort, this will be COTE’s first West Coast location and a major expansion of its acclaimed Korean steakhouse concept. This will be the fourth location for COTE after NYC, Miami, and Singapore.
COTE NYC is celebrated as the only American steakhouse on the top 10 list of the Best Steakhouses in the World. It is also America’s only Michelin-starred Korean steakhouse, combining the social engagement of Korean BBQ with the refinement of a classic chophouse. At COTE Vegas you can expect smokeless grills at each table, premium cuts aged in an in-house dry aging room, and an extensive wine list (over 1,200 labels) paired with creative cocktails.
The space is being designed by David Rockwell and Rockwell Group, with dramatic lighting, tiered “stadium-style” seating, private sky-box rooms, a central bar, and immersive touches meant to amplify the theater of dining itself. Underneath the glitz, the menu will spotlight A5 wagyu, 45- to 120-day aged beef, COTE’s signature Butcher’s Feast, and Korean-inspired sides (banchan) that balance bold flavors.
If you’re already eager, good news: reservations are open. You can book via their reservation system, which opens 90 days in advance at 10 AM Pacific Time.
“I went to UNLV, and my first formative job in the world of hospitality was in Las Vegas, so opening a COTE in this entertainment epicenter is more than just any traditional opening—it’s a triumphant homecoming,” said Simon Kim, founder and chief executive officer of Gracious Hospitality Management. “While COTE Korean Steakhouse is a concept I created in NYC, the pulsating energy, music, and entertainment of Las Vegas have always been intertwined in our brand’s DNA, and we’re taking that to the next level with this opening. I’m honored to collaborate with The Venetian Resort on our first West Coast location and thrilled to be partnering again with David Rockwell as we aspire to create the most iconic Las Vegas restaurant the city has ever seen. We’re taking our endless emphasis and focus on excellence in gastronomy and hospitality and amplifying the entertainment angle to the fullest extent to create something the city can be proud of, and I can’t wait to bring it to life.”
Whether you’re a steak connoisseur, a Korean BBQ fan, or someone who loves dining with drama and design, COTE Vegas promises to deliver a show you’ll want a front-row seat for.
